Strawberry Soup from 1900 Park Fare

 

We gave the Strawberry Soup recipe a try and here is what I think…  First, it’s definitely nowhere as sweet as the version in the restaurant.  I think where it’s listed juice, they must mean syrup.  It’s either that or they get frozen strawberries that were frozen when they’re really ripe.  The color of our soup was a little lighter than the version at the restaurant.  It was really easy to make and was still very delicious.  In fact, I preferred the recipe version of the soup a little more.  It still had the intense strawberry flavor but it wasn’t jaw-clenching sweet.  Maybe if we let the strawberries sit a little longer in the fridge we might have gotten a darker pink?  I don’t know.  Give it a try and let me know what you think.
